Gabrielle’s focus as a dietitian is on helping others understand how to enjoy a diverse array of foods that lead to a healthy lifestyle. She works with the campus dining team to ensure that students’ dietary needs are met and has an open-door policy for any concerns students may have. We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements on our menus. From our general manager to our front line servers, we work carefully to address food allergies and special dietary needs. We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. We offer many items for those avoiding gluten, such as sandwich breads, cereals, entrees, & soups. Many of our dishes are made with gluten-free ingredients such as flour, so you can enjoy a wide variety of offerings. Please contact us directly so we can ensure that you are able to enjoy the countless offers we provide.
Simple Zone is our campus “pantry” where food items needed by students with gluten or nut sensitivities are provided. This area is free of tree nut, peanut and gluten-containing ingredients and products.

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part contains fiber and protein, has ≤10% of calories as saturated fat, has ≤10% calories from added sugars, and is restricted in sodium.
